Our Weekend in Pictures

Friday night.... Mexican with these fiiine ladies and then to ice skating rink for a little iceskating and hockey. (not together of course) Kree was a competitive iceskater for those of you who didn't know!! She is multi-talented.  And as for the other three... they were beginners.  :) I just snapped photos and carried their purses, so I can't say a thing! We also enjoyed Coach Silverii lead the Bucking Knights in a fierce game of hockey.  No W, but it was a great game!!


Saturday morning, sweet Rob took us to a new brunch spot... Sky Blue! We even sat on the same side of the table.  We normally make fun of others who do this, please don't be offended if you do this, it is truly a sweet gesture. Just not one we normally partake in. But this saturday was different.  Not for any lovely reason other than the fact that the place was packed and in order to eat without people standing over you... we sat together. :) I soaked up every second.

We decided to go big or go home. Rob had a biscuit bowl filled with cheese, biscuit, brisket and yumminess. We split French Toast pancakes! YUM. And I had a ATB Omelet- Avocado, Tomato and Bacon!  With two cups of black coffee of course!

Saturday night I babysat our sweet neighbors and then went dancing with my sweet friends across the street!! We took about an hour and a half of our weekend to shake it! I wish I had a pic of all of us.  Love dancing with kree, ac, and lace. WAKA FLAKA.


And now for Sunday. Well first of all, I had the opportunity to sing in the choir at Fellowship on Sunday! Such a blessing.  We only have a choir every few months.  It was so cool to be a part of it this weekend. We sang Forever Forgiven, As for Me, Oh How He Loves and Worth it All.  Check them all out if you've never heard them or want to be blessed. 

Sunday also involved a HUGE trip to the grocery!! I got inspired over the weekend to save money and start cooking.  First Recipe on the list was White Bean Kale Soup. DELISH.  I wish this pic was mine, but it's not. I forgot to take a pic. :) 
This pic isnt mine either... but my soup looked just like this!!! It was so fun to cook with new ingredients like kale, fennel and cannellini beans!

White Bean Kale Soup, French Onion Soup Style

Adapted from Gywenth Paltrow’s My Father’s Daughter
Serves: 4
3 tablespoons extra virgin olive oil
1 onion, sliced thinly
1 fennel bulb, stems and fronds removed, sliced thinly
3 large garlic cloves, minced
Pinch red chile flakes
1/4 teaspoon dried oregano
2 15-ounce cans cannellini beans, rinsed and drained
2 pints chicken or vegetable stock
Coarse salt
1 bunch of kale, stems disgarded and leaves torn into bite-sized pieces
8 thin slices baguette
1 cup of Gruyere or Parmesan cheese
Heat the olive oil in a large heavy soup pot over medium-heat. Add the fennel and onion and cook for 25 minutes, stirring occasionally.  At the 25 minute mark add the garlic and cook for 2 more minutes. The onions and fennel will be slightly carmelized–this is good!
Add the chile flakes, oregano and pepper and cook for a minute. Add the beans and stock, bring to a boil, lower to a simmer and add salt to taste, and let cook on low heat for 1 hour. Note: I didn’t need any extra salt.
Stir in the kale leaves and let it cook for 2-3 more minutes, or until slightly cooked. Lade into four ovenproof bowls. Float two toasts on each bowl and evenly distribute the cheese. Put the bowls under the broiler until the cheese is bubbly, less than a few minutes.

Then I made these delicious oatmeal chocolate chip cookies (found from pinterest!) Also, turned out to be delish and may become "my famous recipe"

so... all that to say, it was a great weekend! Happy Monday!
