Eggplant Pasta it was!


Yesterday, I wanted to cook eggplant but was stumped for ideas.  I totally made this up, but after reading a lot of recipes online, this seemed best for my tastebuds!

                       

First I peeled the eggplant, chopped it into chunks and salted it.  Then sauteed it with chooped garlic, onions and green peppers.  Added Salt, Red Pepper and some Italian seasoning.  After it sauteed for about 15 mins, I added some marinara and fresh roma tomatoes (chopped).  I then let it all simmer for about 15 mins and poured it over wheat pasta! YUM.
